The Hinemos HachiJi is a nigori sake with a creamy texture and an enveloping flavour of rice-driven sweetness and umami, with a slightly tart aftertaste that cleanses the palate. It has a main aroma of cooked rice, sake lees and fresh cheese. On the nose, it has notes of lychee yoghurt, rice flour and lemongrass. On the palate, it is lightly alcoholic with sweet and juicy acidity, coconut cream, pineapple and passionfruit flavours. It has a soft and creamy texture. This sake is suitable for pairing with mochi ice cream, pear compote and spicy dishes. It is recommended to serve well chilled (4-8 °C) and to store in a dry and cool place, avoiding direct sunlight.
