This 75cl Spätburgunder (Pinot Noir) is a typical Pinot Noir, with its tannins in harmony with its fruitiness. It has a cool elegance and great aging potential. The Assmannshäuser Höllenberg vineyard, where this wine is produced, is legendary for its first-class Pinot Noirs. The vineyard's south-facing position and slate-rich soil create optimum conditions for growing Pinot Noir vines. The wine is made with low yield, ideal soil conditions, and an early harvest. Fermentation on 10% of the stems gives the wine fine phenolic textures, and maturation in first and second use barrique barrels captures the power of the wine. It is bottled unfiltered after 18 months in the barrel. This powerful Pinot Noir pairs well with game and other dark meats, and it complements strong-flavored dishes.
