Solevari Reserve, Fetească Neagră DOC is a 75cl red wine from the United Kingdom. The grapes come from yield-reduced vines that average 10 to 15 years old. To reduce the grape yield, workers cut a percentage of the grapes from the vine and leave them on the vineyard floor. This process allows the remaining grapes to ripen and develop more flavor. The grapes are then destemmed and lightly crushed before being pressed at 11 days. Fermentation takes place in stainless steel at a controlled temperature of 28 degrees Celsius, with the skins left in contact for the duration. Natural malolactic fermentation follows, with the wine then aged in medium-toasted French oak. The result is a wine with a brilliant, spicy nose featuring notes of black pepper, blackberry, blackcurrant, and red cherry. The wine is medium-bodied, with firm tannins and well-balanced acidity. A hint of coffee is present on the finish. This wine pairs well with pasta alla norma, bolognaise, game, and black fruit desserts.
