Fernando de Castilla's 20 year old Pedro Ximenez PX is a fortified wine with 450g/l sugar. It has a rich, intense flavor with notes of coffee, liquorice, sweet tobacco, prunes, figs, raisins, tea, and a lightness and delicacy. This sherry is ideal with chocolates, chocolate-based desserts, ice creams, pastries, and certain cheeses. It's best served at 10-12 degrees Centigrade. The Pedro Ximénez grapes are harvested and dried for up to 2 days in the hot September Spanish sun.
