This is a typical Vin Jaune from the Jura region, made from old vine Savagnin grapes. It's fermented in barrels and aged under a veil of indigenous yeast for 6 years, giving it a wild, nutty and powerful flavor profile with notes of raisins, curry leaf, walnuts, butter and brioche. The wine is produced by Amélie Guillot, a respected vigneron who relocated to the Jura from Burgundy in 1995. Her wines are known for being true to the region's classic style. This wine is best enjoyed with some judiciously aged comté from the same region.
