This dry Chardonnay is a golden yellow wine with elegant notes of gooseberry and lime, and a spicy flavour with filigree acidity on the palate. It's a perfect companion to crustaceans such as lobster, lime-marinated scallops or Asian dishes. The wine is made from both loess and volcanic soil vineyards, giving it an acidic backbone and creaminess. It gets extra time in tank, on lees, after ageing in barrel, resulting in a persistent, long and pulsing wine with electric energy. The balance is perfect, with the fruit being ripe but chiselled, long and focused into a smooth curve. The barely smoky oak carves relief into flavours.
